fix: use expo glass mobile header controls

Replace the workspace header menu with Expo SwiftUI glass controls on iOS while keeping an asChild Router menu fallback for non-iOS surfaces.

Explicitly clear stale native-stack header items from settings and pairing so the old prominent top-corner shortcut cannot survive a bundle reload.

Add regression coverage for the Expo glass control path and for avoiding the prominent native header item chrome.
