Preserve transport metadata that is not currently editable (HTTP/SSE headers and stdio env) when updating an existing server.

Improve stdio argument serialization/parsing to support quoted and escaped values so existing argv entries round-trip correctly through Edit -> Save.

Add regression tests for argv round-tripping and metadata preservation in the desktop MCP draft helpers.
