refactor(mobile): remove unused React Query layer

Delete unconsumed workspace query hooks and the unused query provider while preserving the existing store and JSON-RPC bootstrap. Remove only the TanStack dependency and lock entries; provider lifecycle regressions and both platform exports pass.
