Mechanical move of the V1-V7 persisted-snapshot types, zod schemas, and
parsePersistedSessionSnapshot migration parser into
src/server/sessionStore/snapshots.ts. sessionStore.ts keeps file I/O and
re-exports the public surface, so no call sites change.
sessionStore.ts: 1,078 -> 185 lines.
