test: move desktop suites from mock.module payloads to DI override seams

13 desktop test files installed unrestorable module-scope mock.module
registrations for agentSocket/desktopCommands with mutually inconsistent
payloads that leaked across files in Bun's single-process run. They now
install per-test overrides via setJsonRpcSocketOverride and
DESKTOP_API_OVERRIDE_KEY in beforeEach and remove them in afterEach,
delivered through a shared desktopCommandsBridge helper.
