The desktop app was baking MODEL_CHOICES at Vite build time, so newly
added providers (NVIDIA, Together AI) weren't visible until rebuilt.
Now the UI derives model lists from the server's providerCatalog sent
over WebSocket, falling back to MODEL_CHOICES before the catalog loads.
